Fruited Matzo Kugel

1 can crushed pineapple -- in juice

4 medium apples -- peeled, cored and grated

3 large eggs

3/4 cup egg substitute – or 5 additional eggs

3/4 cup sugar

3 tablespoons oil

1 cup matzo meal

2 packages mixed dried fruit bits (or diced dried fruit mixed with 1 tablespoon raisins)

1. Preheat the oven to 325 degrees. In a large bowl, combine all ingredients and mix well. Turn into a greased 13x9 inch glass pan. Bake for 50 minutes until the Kugel is set. Cool to warm and serve, or cool and reheat at 350 degrees until just warm.
