Grilled Spiced Citrus Chicken Kebabs with Fruit

Can be served on Sukkot or Shabbat

Serves 8 - 10

10 medium boneless skinless chicken breast halves

1/2 cup fresh lemon or lime juice

1/2 cup yellow or Dijon mustard

2 tablespoons olive oil

2 teaspoons chili powder

2 teaspoons ground coriander

1 teaspoon ground cloves

1/2 teaspoon ground cinnamon

1 teaspoon sugar

1/2 teaspoon salt — optional

1/2 teaspoon ground pepper — optional

1/2 pound red grapes

1 pound mushrooms — stems removed, washed and dried

3 small Fuji apples — peeled and cubed

salt and pepper — to taste

20-25 wooden skewers

1. Cut the chicken breasts into 1" cubes. Set aside

2. Combine the citrus juice, mustard, oil, spices, sugar, and salt and pepper, in a large plastic zippered bag, or a large, covered, container. Add the chicken and refrigerate for 8 hours or overnight.

3.One hour before dinnertime, add the grapes, mushrooms, and apples to the bag, and let everything marinate for 1/2 hour. Meanwhile, soak the wooden skewers in a sinkful of water.

4. Grease, and preheat a gas grill for 10 minutes on high. If you have aluminum grill-toppers, grease them, and place on the grill prior to heating.

5. Thread the chicken, fruits, and mushrooms on the skewers, alternating them, and leaving a little space between things to allow for better cooking. Sprinkle with salt and pepper, to taste.

6. Place the skewers on the grill. If using a grill-topper, the kebabs can be cooked on high for 3-5 minutes per side, until nicely browned, and an instant thermometer inserted into a chicken cube is at least 160 degrees. Baste the kebabs after they have been turned. If not using a grill-topper, brown the kebabs for 2 minutes per side, and then lower the heat to medium, and cook until the chicken reaches 160 degrees, about 10-15 minutes total.
