Grilled Honey Cashew Chicken Breasts

1/2 cup honey
1/4 cup soy sauce
1 tablespoon peanut oil
    -- or toasted sesame oil
1 tablespoon fresh ginger -- minced
1/4 cup dry sherry
8 medium boneless skinless chicken breast halves
2 tablespoons honeyed cashews -- finely chopped

In a large container, combine the soy sauce, oil, ginger, and sherry. Place 4 chicken breasts inside of a jumbo ziptop bag. With a meat mallet, pound the chicken breasts so that they are about 1/2" thick. Repeat with the remaining breasts. Add them to the container, cover, refrigerate and marinate for 2-4 hours.

Heat a gas grill on high for 10-15 minutes. Sear the chicken on both sides, reduce the heat and cook breasts about 7-12 minutes more or until the internal temperature is 170-185 degrees. Sprinkle the chicken with the honeyed cashews just before serving.
