Quick Homemade Applesauce

Serve on: Rosh Hashanah, Sukkot, Passover, Chanukah

10 cups cold water
1 lemon
4 medium Golden Delicious apples
8 medium Macintosh apples
1/3 cup water
1 tablespoons brown sugar, or to taste
1/4 teaspoon cinnamon, or to taste

1. Place the water in a 12-cup microwavable container. Squeeze in the lemon.

2. Peel, core, and halve the apples. Drop into the lemon-water. Drain well. Add the water, cover with plastic wrap, and microwave for 15 minutes. Stir, mash down on the apples, cover and microwave another 10-20 minutes until the applesauce is a smooth as you like it.

3. While the applesauce is still warm, add the sugar and cinnamon. Let the applesauce cool, and then cover and refrigerate.
