Updates to Passover
Desserts:
1. Crisps and Cobblers - Pages 68-71
Because there is no crust to get soggy, you actually do not need a
thickener, but you can use the tapioca (not certified Kosher for Passover)
or 2 teaspoons of potato starch mixed with 2 tablespoons of some of
the liquid from the fruit.
2. Feather Pastry Brush
You may not want to use a feather pastry brush if your dessert is dairy.
Nylon brushes can be bought, which are made by Fox Run Craftsmen, Ivyland,
PA 18974
3. Parchment Paper
Some parchment paper may have starch on it, and may not be suitable
for everyone. In this case, Dupont Teflon mats may be bought from Kitchen
Kapers (1-800-455-5567), or the pans can be greased and dusted with
cake meal (as done in regular baking - not a very reliable method!).
4. Rubber and plastic cannot be kashered.
Plastic spatulas and scrapers and Cuisinart bowls and blades must be
purchased for Passover.
5. There are a couple of instances where instructions call for "buttering"
a pan.
If the dessert is to be pareve, use unsalted pareve Passover margarine.
